A subject must contain a noun, a subject modifier is expanding on the noun and therefore the subject.
In the sentence example given above: Fat Cats can sing
Subject: Fat Cats
Noun: Cats
Modifier: Fat cats
Ex: The girl in the blue dress arrived late
Subject: girl in blue dress
