I am a bit confused as well about this question...I guess because it says that the "microwave creates the small zones" so isn't it the microwave that is the ultimate cause still?! I mean if it were to be heated using the conventional heat source these "zones" wouldn't be made and therefore the enzymes would probably still be present...so can you please help me understand why it isn't microwave--zones--loss of enzymes.
