Considering all these issues I really feel like the LSATFlex should be like the first digital test taken where they allowed you to see your score and then cancel. It is unfair they're not treating this like the big change it is.

What about the time? I think in-person was supposed to be at 12:30pm, does that mean LSATflex will be taken at 12:30pm depending on where you are located?

How can we best prepare for the LSATflex as opposed to the regular in-person LSAT? Should I be doing my practice tests as I would for the normal test or should I do it as it will be for the flex (only three sections)?

I am also doing LSATFlex. My plan is to take 3 sections by simply skipping the 2nd LR section (will use it to practice more later) - and seeing how many I got wrong. There is then a score calculator on 7Sage or Google to give you your approximate score.
