Regarding reference letters, my references are asking who should these letters be directed towards. Should I ask them to put the names of admission officers as the recipient?

Eh, not really bc you can't really be 100% sure (unless you are then go ahead) who they are. Dear Admissions Committee of [school] should be fine.
