I eliminated A based on the fact that if the small-beaked birds were easier to capture for the most recent study, there's nothing to support that they weren't easier to capture in the earlier study as well.

In other words, the ease of capture didn't change from study to study, so A doesn't explain the findings.

I understand why A is correct, but I don't understand how you can eliminate C here.

Stimulus: "Phyto may SLOW cholesterol absorption and thus have anti-cancer effects."

C: "... showed no significant reduction in cholesterol levels after switching to a soybean based diet."

Slowing the rate at which you absorb cholesterol doesn't mean you reduce the total amount of cholesterol. It just means you absorb it slower. C has no relevance to the stimulus, because the stimulus says nothing about cholesterol levels, only the rate at which cholesterol is absorbed.

Concept of negation reminds me of the negative compartives from the Grammar section.

For example:

Tom is not taller than Athena.

Doesn't mean that Athena is taller than Tom. They could be equal heights.

Now, look at the example from this section:

The rate of violent crimes has not risen in the last 5 years.

Doesn't mean that the rate has fallen. It could remain the same.
