Depending on where you are in the country and if there's a certain school you are geared toward, a FEB LSAT for fall admission still might be workable; you will have to email the schools you have in mind.
Plenty of us here have done exactly what you're planning. A buddy of mine took the LSAT last fall, was accepted to his top school, then delayed further to intern.
Taking another year or two off should be fine.
Your scoring goal is very reasonable within the allotted time. If applyingfall '17 (to matriculate '18) I recommend taking the June sit (more prep time, disclosed, still allows Oct retake) over Feb (undisclosed). Best:)
