I still don't understand why answer choice E is wrong. My understanding is, iIf stress is a symptom of a weakened immune system, then wouldn't that mean that symptoms such as stress then lead to or cause the weakened immune system?

I don't understand how and why Jon explained it that a weakened immune system is the sufficient and stress is the necessary? And that the causal relationship is flipped.

Hey there @nye887085 by applying the term "symptom" to stress you are implying stress comes from a weakened immune system. By that logic all individuals with a weakened immune system experience stress. That is not what is needed. (C) is actually stronger of a statement than is necessary. It could have said: "the amount of stress someone experiences plays a role in their immune system." For the argument to hold, at minimum we need there to be a relationship between the two ideas. If we negate and say there is no relationship, then the argument becomes silly.
