I saw that 7Sage recently added older material but said they aren't typically recommended for use in studying. I was wondering why since I'm running out of the more recent PT material and will be needing to use the older PTs. Is it that they're a little easier than what's more recent?

Old material is still useful in terms of practice. I solely used old material, besides The Loophole and even that pt isn't that recent, studying for when I took it in November. I scored solidly in the band of scores my pt predicted even when taking into account test day jitters.
I use them even though I am not running out of material:
I don’t find them easier/ relative I guess
LSAT already repeat questions so I don’t see the negative
Not much else for you than them since you ran out
