Could it be beneficial to do RC questions out of order?
Instead of reading the passage and proceeding through questions 1-end, would it be better to specifically seek out higher priority question types.

I really struggle with the structured reading required for RC passages. I am hoping that attacking the structure/main point questions early will be useful while that information is fresh. Even when I have attempted a low res summary I still get really hung up on those structure questions, having to review and compare each sentence in AC to the passage's paragraphs.

The only way to know is if you try.
I wouldn't do this tbh. You are going to spend valuable time jumping between questions only to have to come back to the questions you skipped. Work on gaining comprehension and then faithfully answer the questions based on it! I'd recommend listening to some LSAT Demon advice on how to do RC.
