I feel like my P.S. and my Supplementals really mostly focus on my experiences post-grad. For context I am two years out of school, and I did have some relevant experience in undergrad, but my most meaningful experiences in terms of law school have been post grad. Is this something that the admissions officers might question?

Good question and - without looking at your PS - this shouldn't really be something that worries an admissions officer. If the goal of this doc is to explain why you want to go to law school and if that explanation is really about the last two years, then talking about the last two years should suffice. But if you'd like to mitigate things a smidge, you can always give a brief "head nod" towards undergrad in one or two sentences. That shouldn't be too difficult if you had some relevant experiences during college!
