So I already have two LOR's from professors I've worked closely with during my time as an undergraduate. However, after graduating, I worked for a NYS Assemblywoman for about a year and a half who also wrote me a LOR. Was wondering what people's opinions are in terms of providing this third LOR of just leaving it at my two.

If the relationship is meaningful, then I see no problem with it especially since its a working one.
The problem with political letters typically is that they are a "friend" of the family and you barely know them which makes the letter cheap and meaningless. But in your case, you have a bona fide working relationship which is what admissions wants to see.
