If a university's personal statement prompt doesn't mention "why our school," would you still end on a note highlighting that specific university? Or would you just end stating why you want to attend law school in general?

I recommend adding a "why X" bit if and only if you can say something that is genuinely tailored to the school. Adding an obviously generic sentence like "And that is why I hope to attend [INSERT LAW SCHOOL NAME]" or "your great program will help me achieve my dreams" is not going to help and could hurt.
Note that, even if you do add a "why X" bit to your PS, you don't have to write much—just well.
