Do we know the order of the sections we'll see on the test? In the practice tests it seems to be random. Also, is the writing sample last and is there any break in between?

The writing sample you have to schedule separate from the exam. And no you will not know the order of the sections they are random just like the PTs.

The writing section usually becomes available before test day and you can launch it whenever works best for you. It's a pretty painless experience.
