I wouldn't buy an LSAT-specific watch. I got a cheap analog Casio. $10. Takes less than a second to reset to X:25 betweensections. When the big hand is vertical, time's up. I can also time the break! I reset to X:45.

I just used my phone. I marked the frame on my desk with tape so that I could keep my test from straying off camera, then just took the test like normal only stopping and starting the video betweensections.
I think your best bet is to get a divers watch with a rotating bezel. This way you can still use it after your LSAT days are over and I feel it is the quickest way to reset in-betweensections.
