Is it ever possible that your personal statement/ diversity statement leads admissions to consider you URM even if you are not part of the categories they mention as being URM?

I am not sure what you are asking here. An underrepresented minority is an individual who is a member of an underrepresented ethnic or racial group. If you are asking whether they can see from your personal statement that you are a diverse addition to the class, then the answer is yes. But you can't be seen as a URM unless racially or ethnically you are a member of an underrepresented group.
People right diversity statements about all different things not just race or gender. I think a diversity statement's point is what will you bring to the classroom.
