I am in the process of writting my personal statement for some of my canadian schools, can anyone share please maybe any resource they used? or ideally, how they approached it? I just feel I am listing experiences but not fleshing it out can someone please assist me.

I would suggest looking at reddit and sample PS that schools have posted. It not only allows you to see the diversity of these essays, but also some of the examples provided by schools highlight essays that stood out. However, as the other comment said you want to talk about the interest in law, so how did the experiences you listed bring you to apply to law school.
