Is it ok if my resume is 11pt font and my essays are all 12pt?
The 11pt font was the only way to keep all my bullet points to one line on my resume. If my font size is consistent across all my other essays, is this an ok difference for the resume?

It's totally ok for the resume to have a different font size versus the other docs! Your audience's eyes are trained to consider the resume as a very different document versus the PS, DS, addenda, and optional statements. We're not trying to read every word so it's ok to use somewhat smaller font, adjust the margins, and all that.
But for anyone reading this, the reverse is also true - your PS, DS, addenda, and optional statements should have the same font size and formatting. It just looks weird to see 12 point Times New Roman on the PS and then 11 point Arial on the diversity statement - it feels like you're using a completely different voice!
I would honestly say if you can find the emails to the law school admissions committee, just email them directly and ask. I've done this a bunch of times and its better than speculating. Just ask the source directly. You can usually find their email on the law school websites.
I think that's totally fine. But other than the schools who require 12pt font, why not make the essay fonts 11pt as well if you're concerned about uniformity?
That's what I did for a school that required 12-point font for their essays.
