If I take a PT simulated flex, is that the best route to go? I know that's how it will be when I take the flex LSAT but I also don't want to miss out on the practice that the other section would give me. Advice??

I've been taking the regular 4-section PT. In addition to helping you practice under test conditions for an extra LR set, you're getting a more accurate score (from what I understand of 7sage's flex scoring).
I think the extra session can only help.
If you feel like you need stamina work or want to change things up every once in a while, do it as a 4 section test (or even add in a 5th section if you want to get a taste of what it was like pre-flex). Otherwise, just use the extra section for drilling.
