I don't understand how we're supposed to decipher the complete truth of a situation when we're expected to identify the situation logically

If the text explicitly says Tom’s recipe is easier to follow, why COULD IT BE harder?
How can we differentiate understanding what “that” means for comparatives that we’re looking at now, vs the lesson when we were determining the predicate object “that”. In this examples it suggests a modifier so I’m just confused at deciding what “that” means.
How can we avoid from thinking that “discover” is a main verb instead of helped?
