I think he just does that in the videos because he is doing it on the screen. In real life, never erase, just cross out mistakes. Unless you absolutely are forced to. Or if you make a mistake on the answer sheet. -

Did you receive something in the mail from LSAC regarding you not signing your answer sheet ? It looks like until this is fulfilled you won't get your score. During the LSAT you must have forgotten to sign your answer sheet. -
