While I'm obviously not an admissions person, I don't see a big problem writing 1-2 quick paragraphs. Get directly to the point, don't make them read a lot and just let them know it was an off semester. Ideally they're like "Ok, fair enough." :)
I would go through all of the sections in order and all of the lessons, however don't feel like you need to complete every single problemset - this is where all of the hours start to add up.
I would also add that I don't think it's necessary to do every single LR problemset - so rather than skipping an entire section, maybe just skip some of the problem sets. I certainly agree that you should not skip any of LG - do everything and more.

What I've been doing is stimulating the Flex, and before I start, I create a problemset with the remaining section, then take all 4 in a row. That way, my score is accurate and I am still practicing a full length test!
My default seems to be set to that, too. I am ... the settings so that each problemset pulls up with the correct ... "Standard time" before beginning the problemset.
