Do you guys give personal statements/ essays/ other material you plan on submitting to schools to those writing your LoR too? Or is that discouraged. Also, are you able to read a given LoR to decide among the ones you have which one to submit?

I would. My understanding is that schools often get the score before you do if you submit via LSAC and use the tool to indicate a score is coming. If you have specific questions or trouble navigating contact me.
I'm not sure submitting a mediocre DS or any other writing would be a good option. They will certainly note & take into consider how well thought out and written everything you submit is.
