yeah I will just go with a word or excel doc. I will only be using this to practice individual tough questions I have screenshot and organized by PT. I want to sneak in practice during lunch time without drawing attention from people using a scantron paper copy. Word/Excel will actually work better.
You could just make a word doc with rows and columns for your ACs and question numbers unless you're looking for something you can circle in.

Edible answer sheets maybe not a bad idea. Especially for those low test scores you just want gone forever, lol.

I don't know if I understand it well, but you would like to fill in the blanks on your computer, not on paper? Hmmm... I think you should practice with actual paper. hahahahha I have been loosing it for some time now but not quite to the point of surviving off LSAT scantrons. I am looking for a fillable pdf of the answer sheet to discreetly do untimed practice whenever I get a chance. Paper copies attract too much attention and i am unlikely to feed myself a digital copy :)

Could you elaborate on what you mean by "editable"? Do you want LSAT Answer Bubble/Scantron Sheet (https://classic.7sage.com/free-lsat-prep-tools/) that doesn't say "LSAT" on the paper?
