Go ahead and get him/her to write it. A lot of schools ask for an additional letter for scholarships so it'll be good to have on hand even if you decide not to use it as one of your primary letters.
Academic over employment almost always. The exception being maybe 5-10+ years out of school, in which case a professional one is probably good to have.

I feel like im going crazy imagine waking up tomorrow with a letter from LSAC saying we all have to rewrite because and entire virus game was removed from scoring or something

Can I deleted the letter myself or do I have to call the LSAC? I do not see an option for me to delete it. My concern was the timing of letter on file as shown by the time stamp.
A one-two year old letter isn't stale, I think you should be fine. Also I haven't been on LSAC in a while but if you can't find the option to delete then call LSAC for assistance.
